When it comes to flavouring you can keep it simple, use good quality food safe essential oils, or sprinkle nuts, seeds, cacao nibs or dried fruits on top. Just adding some salt is delicious when you have it with a nice glass of organic red wine...just saying.

This is definitely a little more 'gourmet' looking with the beautiful layers, but trust me when I say it's still super EASY to make! I don't even clean my food processor between the base and filling ;-) 

As most of my recipes, it’s also grain-free, gluten-free , egg-free and dairy-free so most people are able to tolerate this. For a nut-free version simply use your favour seeds such as pepitas and sunflower seeds.  Adding the orange really adds something special I think too, though it's delicious without it too if you're not a jaffa fan! So enjoy, and have some fun creating these beautiful and tasty layers :-)

My family has already requested that I make this delicious (but healthy!) dessert for Christmas! On a hot day there’s nothing more refreshing than this, and it’s also grain-free, gluten-free , egg-free and dairy-free so most people are able to tolerate this.

You can also change the flavours by using a different combination of nuts, and also play around with your favourite flavours of fruit, essential oils or citrus zest. For example, mango with lime (zest or essential oil) is really refreshing and a chocolate (and orange zest or essential oil) version using raw cacao is always popular ;-)

This must be my most gourmet raw dessert yet - it just looks amazing and packs a punch of flavour!

It was inspired by a Food Matters recipe and thought I’d experiment with a peppermint essential oil recipe as I’m always using orange flavouring for raw desserts. And the outcome was pretty delicious!

What’s great about this is that all the ingredients are real and there are no hidden additives, flavours and colours. It’s full of healthy fats that will balance out the sweetness and keep you feeling satisfied so you won’t be hungry within half an hour!

When I first learnt about this recipe - I was soooo excited!! If you have a chocolate or sweet craving then this is one seriously healthy version of it, just make sure you use raw cacao (versus the processed version which is cocoa). 

And this easy recipe is perfect just in time for Mother’s Day, and what a cheeky way to sneak in some healthy avocado into your kids (just make sure you blend it well to make sure there is no evidence of green avocado chunks)!
