Zucchini noodles with olives and tomatoes
This has to be my favourite way to eat zucchini! And it’s super simple too with no cooking required, and an easy way to add some extra veggies to your meal (and kids!) and also a great noodle alternative if you’re grain or gluten free.
If you can get your hands on a julienne peeler then you’ll get these nice noodle style strips, or there are spiralisers and other food processor attachments also. But if not don’t stress, just a simple veggie peeler will do and will give you lovely ribbons, you can chop the zucchini length-ways first and then peel to get a fettuccini-style noodle.
This is a very basic recipe that you can add to very easily, I’ve kept this as a nice simple recipe that can be thrown together in a few minutes.
Ingredients
2 Zucchinis
Punnet of cherry tomatoes
10 Olives
Dressing
Olive oil
Apple cider/balsamic vinegar
1 Lemon or Lemon essential oil
1 Garlic clove
Parsley (few sprigs)
Salt & Pepper
Directions
Peel the zucchinis into long strips/noodles using a vegetable peeler or julienne peeler.
Pit and chop the olives and add into bowl.
Create a simple dressing using the olive oil, vinegar, juice/zest of 1 lemon, garlic, parsley, salt & pepper and stir well.
