Have you met... kale and the other assortment of leafy greens?
Green leafy vegetables are all the rage these days – and with good reason! They’re so versatile and pack a host of vitamins and nutrients. If you consume these with a healthy fat (e.g. olive oil, coconut oil) it will ensure that you absorb all the fat soluble vitamins that they contain to make the most of them, and this will also lessen the chance of being bloated (steaming/cooking them will also lessen this possible effect).
Try all different types of greens (e.g. kale, spinach, silverbeet, rainbow chard, bok choy, beet greens etc), and try various cooking techniques to see what you prefer. You can also play around with adding different herbs and spices to add some more flavour. And if you don’t like them as a side on their own, just chop them into small pieces or blend them and add them to your smoothie, eggs, vegetables or any meal for the last 5 mins of cooking. You can barely taste them but you get all the benefits that they have :-)
